SALMON DIJION :: B.C. SALMON RECIPES

Here's another salmon recipe that serves four and you can have table-ready in half an hour.
Ingredients
4 salmon steaks
2 tablespoons dijion mustard
1 teaspoon molasses
1 teaspoon lemon juice
Olive oil (about a tablespoon)
2 cups seasoned croutons
1 large zipper bag
Preparation
1) Mix the dijion mustard, molasses and lemon juice together in a small bowl and brush the mixture over the salmon steaks, both sides.
2) Use a rolling pin to make crumbs from the croutons.
3) Place the crumbs in the zipper bag and shake one steak at a time until well coated with crumbs.
4) Oil a large non-stick skillet, raise to medium heat and add the salmon.
5) Cook the steaks about 5 minutes per side. The coating should be lightly browned and the salmon flesh should flake easily with a fork.
